— WHAT IS HACCP / FSSC 22000 —
HACCP and FSSC 22000 are systematic food safety management approaches that identify, analyse, and control biological, chemical, and physical hazards in food production — protecting consumers, meeting regulatory requirements, and unlocking access to demanding export and retail markets.
What Every Food Safety Project Includes
HACCP / FSSC 22000 / FSSAI Compliance
Hazard Analysis
Identify biological, chemical, physical hazards
HACCP Plan
Determine CCPs, critical limits, and monitoring
PRPs
Implement prerequisite programs for hygiene
Documentation
Food safety manuals, checklists, and forms
Validation
Validate food safety control measures
Certification
Support during external FSSC/HACCP audits
A food safety incident = brand damage, recall costs, and criminal liability
A single pathogen contamination event, allergen mislabelling, or foreign body complaint can trigger product recalls costing crores, destroy brand trust built over decades, and result in criminal liability under FSSAI. Systematic HACCP management prevents these incidents by identifying and controlling hazards before they reach consumers.
Export customers require FSSC 22000 or GFSI-recognised certification
EU retailers (Tesco, Sainsbury's, Aldi), US food manufacturers, and Middle East distributors require their food suppliers to hold a GFSI-recognised certification — FSSC 22000, BRC, or SQF. Without FSSC 22000, you cannot qualify as an approved supplier regardless of your product quality.
FSSAI compliance alone is not enough for organised retail and export
FSSAI licensing is the legal minimum. Organised retail buyers (Big Bazaar, Reliance Fresh, D-Mart) and export buyers require documented food safety management systems beyond FSSAI. HACCP and FSSC 22000 are the market access requirements that separate professionally managed food companies from unorganised suppliers.

— HOW IT WORKS —
Define the food safety management system scope — products, processes, customer base, and regulatory requirements (FSSAI, FSSC 22000, customer codes). Develop detailed process flow diagrams for all products in scope.
Document and verify effectiveness of PRPs (Prerequisite Programs): facility layout and design, cleaning and sanitation, pest control, personal hygiene, supplier management, equipment maintenance, and allergen management.
Systematic identification of biological (pathogens), chemical (allergens, pesticides, additives), physical (glass, metal), and radiological hazards at every process step. Evaluate severity and likelihood to determine significant hazards.
Apply the decision tree (Codex HACCP Principles) to identify Critical Control Points (CCPs) and Operational Prerequisite Programs (OPRPs). Establish critical limits, monitoring procedures, corrective actions, and verification activities for each CCP.
Complete FSSC 22000 / HACCP documentation package. Train HACCP team, food handlers, and management. Conduct HACCP plan validation — verify the plan controls the identified hazards under real production conditions.
Pre-certification mock audit, HACCP plan review, and corrective action closure. Support during FSSC 22000 Stage 1 (document review) and Stage 2 (site audit). Most Prism-prepared clients achieve FSSC 22000 certification in the first attempt.

Prism helped us develop our HACCP plan for the new cheese processing line. Comprehensive hazard analysis, CCP identification, monitoring procedures, and corrective action records — all aligned with FSSAI and Codex requirements. The documentation was thorough and audit-ready. Highly recommended for food safety consulting.
FSSC 22000 certification was a requirement from our UK retail customer. Prism guided us through the entire process — ISO 22000 QMS, PRP and OPRP documentation, HACCP plan, and management system integration. We achieved certification in 6 months. Prism's team understood both the technical and commercial aspects of food safety.
We had a FSSAI license but no structured food safety management system. Prism built our HACCP plan from scratch, trained our production team, and prepared us for FSSC 22000 certification. The investment has already paid back through new export orders that required FSSC 22000 from our customers.
